What experience in your life led to your interest in food and cooking?

As a child, we always had dinner as a family. When i would get home from school, my mom always had freshly baked cookies and snacks. My daily question to my mother was ‘what’s for dinner?’ My sisters and I would assist my mom whenever we could. From those experiences is how I came to enjoy cooking.

Describe the moment when you decided that you wanted to pursue a career in the culinary field.

As a teenager, I got my first job as a busboy at a country club. I loved the fast paced environment and watching the chefs in action. This was the launching pad for my culinary career.

What challenges have you faced, and what obstacles have you had to overcome, to pursue your career in the culinary field?

Tough question! There were many. This is not a career for the faint of heart. Personally, the most challenging aspect of my profession has been working with people who don’t meet my standards and expectations.

How have friends and family reacted to your career choice?

My family and friends have always been supportive of my career choice. They are proud to have a chef in the family.

What do you like most about working in a professional kitchen?

I love the hustle and bustle of working in a fast-paced professional kitchen. There is always knowledge to be gained, regardless of how much experience one has.

What’s your favorite comfort food?

I have many! I love a traditional Thanksgiving dinner, Yankee pot roast meatloaf and shepherd’s pie. I am a meat and potatoes kind of guy. I also have a weakness for ice cream and sweets.

What is your favorite thing about working at Snapchef?

I enjoy the flexibility of working at Snapchef. Working for different chefs at various accounts, I am always challenged weather doing prep or working the grill. I am rarely doing the same station for a long time. Variety is the spice of life.

What is your advice to those interested in pursuing a career in the culinary field?

Work hard, pay attention, keep an open mind and be humble. A formal culinary education is great, but learning from skilled chefs in the work place is more valuable.

What are some of your other hobbies outside of cooking?

I enjoy reading. music and sports. I also love trivia and working in my yard. I love vacationing at the beach in Maine as well.
