Our recipe of the week comes from HR Assistant, Jennifer Gilroy. Jennifer has this to say, “It’s definitely a comfort food, easy to make and so delicious.”
Ingredients:
- 4 lbs bulk sausage – 2lbs hot, 2lbs mild
- 2 Large bags of minute rice cooked
- 4+ Large can of chicken broth (may need to add more as it cooks)
- 2 Large chopped tomatoes
- 1 Chopped onion
- 1 clove of garlic
- 1 box of baby spinach
- 1 TBS chopped parsley
- salt and pepper
Directions:
In a large pot, Brown Sausage, onion, and garlic and drain grease. Add tomatoes and parsley and cook 1-2 minutes.
Add 4 cups of chicken broth and simmer for 10 min.
Add 2-3 handfuls of spinach (may want to add more to your liking) and simmer for 5 min. Season to taste with salt and pepper
Add rice and simmer for 1-2 minutes. (May need to add more chicken broth)
Serve with grated cheese.
