What experience in your life led to you interested in food and cooking?
I first began learning to cook as a Dunkin Donuts baker from 1978-1982. It was a great place to work, they were very professional. I enjoyed the early mornings, the smell of the pastries, and the smiles on customers’ faces when they would bite into my freshly baked desserts.
Describe the moment when you decided that you wanted to pursue a career in the culinary field.
The moment exactly hard to define. I have always had a passion for cooking. I was able to use my knowledge from working at Dunkin Donuts to open my own donut shop, Heritage Donut Coffee shop. After I felt comfortable with the donut shop, I opened the Town Grill Diner in 2009 and recently sold it.
What challenges have you faced – and what obstacles have you had to overcome – to pursue your career in the culinary field?
I have faced all kinds of obstacles while working in the culinary field. Like man, I have had to juggle a family and career. The balance is difficult but worth it.
How have friends and family reacted to your career choice?
My family has always been supportive of me. They have not only supported me emotionally but have also helped by working in the family business.
What do you like most about working in a professional kitchen?
My favorite part about working in a kitchen is meeting all kinds of people from different cultures. For me, I try to take what I can from everyone and always stay learning.
What’s your favorite comfort food?
I am Greek, so I love Greek and Mediterranean food. It’ healthy for you too!
What is your favorite thing about working at Snapchef?
Snapchef gives you the opportunity to learn and work in difference kitchens while they teach you about new technology, equipment, and ethnic foods. I didn’t know much about Indian foods a few weeks ago. Now I know how to make a few dishes, from the opportunity of being sent to a kitchen that makes a lot of Indian dishes.
What is your advice to those interested in pursuing a career in the culinary field?
The road pursuing a culinary career is never smooth. When you start out there is a lot of work ahead of you, but the future is bright and most people are very helpful.
What is your advice to those interested in pursuing a career in the culinary field?
Family comes first, so I spend a lot of time with my grandchildren. I also play soccer and go to the gym about 3 days a week.
